running, freezer meals & book club

Two runs so far this week!

I woke up super excited to run yesterday morning!

I'm pleased with our progress so far. Goals for the next couple months-
  • Get our pace comfortably back down in the 11's
  • Be able to run the whole hill back up to our house
  • Do the Chocolate Challenge- July 23

Also ran briefly with this guy in the Munchkin Mile on Saturday- then at the first turn he had enough confidence to take off and run on his own and he did AMAZING!

Tuesday I made this Pesto Tortellini Bake from Passionate Penny Pincher.

This was frozen- I forgot to take a picture after it was baked. But it was bubbly, cheesy and delicious!  I also made it in my really pretty blue 9x13 Pampered Chef pan =D

I also ordered her freezer meal PDF - it has 12 weeks of freezer meals! (There is also a recipe box version but decided the PDF was better suited to me.  The recipe boxes are super cute but  the PDF is more economical and a better way to try them out, in my opinion.  She did a video of week 6  on facebook live at 9 (I think, I'll be at work but plan to check it out later.)  I'm not affiliated with her in anyway- she made the planner I am using this year- which I LOVE! I'm in a major meal planning slump so I am giving this a try :P  Plus my sister wants some freezer meals for after her little one arrives- so I plan to help fill her freezer.

Tuesday was my other book club- I finished the book around lunchtime :P We read The Music of Bees and it was super! I really enjoyed it and our booktalk last night. <3

Our next book is Recipe for a Perfect Wife- sometime in July.

The nextdoor neighbor at work dropped off some lovely flowers to brighten our office.

I just was looking for a little more in my devo time today and read She Reads Truth.  The passage from Ephesians 5 really grabbed me.  Reminding myself to walk in love and live as a child of the Light today!

6 miles, wildlife and PAMPERED CHEF

My focus this week ^

I did not run at all this weekend so I made myself do my long run last night after work on the canal. It was a little bit hot, and more walking breaks than I would like. But ended happy and proud with sore muscles.

Saw some wildlife...

The turtle seemed very interested in me...but maybe he thought I had snacks....

Super excited to wear my new necklace today!

Tonight I will be doing a LIVE video on my page of one of my September TasteBuds recipes.  I love getting monthly recipes and seasoning samples in the mail each month!  Tonight I am making meatball subs and also the pizza chili to pop in the freezer for later.

I planned to have a Fall Recipe Tasting tonight but my box of goodies won't get here in time.  So I'll be rescheduling and doing the above live video instead. The Shared Rewards party ends tonight at midnight.  You can check out the new catalog and/or order here -> https://www.pamperedchef.com/party/fabulousfall0914  and hopefully soon I will be able to have an in person fall party to show off the new products and recipes! ;-)

I'm also really excited for my next freezer meal workshop...

We had broccoli cheddar soup in the Quick Cooker last night. It was super good! Next time I need to give te bread bowls a try too. ;-)  I am really looking forward to fall soup and baking season!

Freezer Meal Review- Parmesan Garlic Pizza Pasta

I made one of the freezer meals from our workshop last night.  I came home with no idea what to cook and no desire to cook. A little pinterest research and I decided to try and cook my Pizza Pasta from frozen in the Quick Cooker! It worked!

The original recipe is farther down the post but here is how I cooked it-

I plopped the whole frozen block in Bruce and set it to custom for 17 minutes- in retrospect- I would have also added 1 cup of the water needed when you add the pasta.  It did scorch a little on the bottom because of that and that also would have helped it come up to pressure.

After the 17 minutes- I released the pressure, broke up the ground beef with the Mix n Chop.  Poured in the pasta and 3 cups of water, stir well,  replaced the lid and cooked on custom for 7 minutes.  *Beef was not fully cooked at this point but finished cooking with the pasta.

Released pressure, stirred and topped with cheese.  Replaced lid for a few minutes to let cheese melt.

This recipe could easily be made vegetarian.  In fact next time I may cut back on the meat and split in two bags so I can have a vegetarian version for Mikayla.

Veggie people- substitute you favorite veg instead of ground beef and pepperoni.  ie mushrooms, peppers, onions, zucchini... whatever floats your boat.

I like how versatile the recipe is- I think next time I might try it in the crock pot. Maybe also with sausage instead of ground beef.  I might also use broth instead of water, to add to the flavor.  Overall it was pretty tasty.  I would make it again for sure.

I enjoy having these meals in the freezer ready to go.  I have my next workshop in the planning phase- shooting for the 1st week of August.

Winner, winner chicken dinner ;)

Last night I made one of my favorite recipes. It did not disappoint. Mikayla also made rice in the rice cooker plus...which came out totally awesome as well.  When I got home from work at 9:30 my mouth was watering as I scooped chicken and rice into a bowl {popping a few pieces of chicken directly into my mouth} and then the microwave for a minute or two.

I found on, you guessed it... pinterest. ;-) You can view the original recipe here, along with 4 other freezer meals.
Garlic Honey Chicken
(4-5 servings)
  • 1 ½  to 2 pounds boneless, skinless chicken breasts (obviously I used chicken legs instead).
  • 3 garlic cloves, minced
  • ⅓ cup  soy sauce
  • ⅔  cup ketchup
  • ¼  cup honey
(Feel free to double the sauce if you like extra sauce)
Add all the ingredients to a freezer bag. Cook 3-4 hours on high or 5-6 hours on low.  We like to eat this with mashed potatoes and a veggie.

My rice cooker has been sitting lonely and forgotten in the basement.  I came across it this past weekend and brought it up to the kitchen to put it to some good use. We sometimes have a little trouble cooking rice on the stove top at our house.  So I was eager to give the ole Rice cooker a shot. If you want to check it out, click the picture. It should take you to my pc website.

Bonus: did you know you can also make a microwave cake in it?? Check out this recipe I found by searching "Rice Cooker Pampered Chef" on pinterest... the name cracked me up...

Freezer Meals!

A few weeks ago on a whim I decided to try out one of the freezer meal menus from a Pampered Chef group I belong too.

I tried out  this one-

Menu 2 “Fresh and Delicious”

• Taco Soup
• Zesty Cheddar-stuffed Sliders with Grilled Onions
• Summer Grilled Chicken with a Twist
• Honey-Sesame Chicken Skewers
• Cran-Orange Pork Tenderloin
Here are all my ingredients ready to go-

I did tweak it a little.  For example, the Honey-Sesame Chicken, I did not put on skewers. I used boneless skinless chicken thighs and tossed the whole thing in the crock pot and let it cook away.  For the Cran-Orange Pork, I used chops instead of tenderloin (they were on sale).

The prep was rather quick and easy. In fact I did most of it while the meatloaf we had for dinner that night was cooking.

I am pretty sure I did all of them in the crock pot with the exception of the Zesty Cheddar-stuffed Sliders, which I must confess I think was my personally favorite and the one I was most proud of! I even made my own slider buns :) I was skeptical that it would be enough form my family of five, but we even had two left over.  I served the sliders with Perfect Oven Fries made with my PC French Fry cutter.

I cooked the sliders in my PC Grill pan.

what's cooking...

Breakfast Burritos. I put a batch of these in the freezer yesterday.  Much to my family's delight.  I came across the recipe on pinterest. You can check out the original recipe HERE.  They are super easy to make.  I freeze mine on a cookie sheet and then put them in a freezer bag.  (This way they are individually frozen and you can easily pull out just one.) Wrap it in a paper towel and pop it in the microwave for 2 minutes and you have breakfast!
 -12 eggs, beaten
-1 lb bulk sausage, cooked (or crumbled links)
-2 cups cheddar cheese, shredded
-12 flour tortillas
Scramble eggs in large skillet until done and remove from heat; stir in cooked sausage and shredded cheese (You could mix in 1/2 cup salsa here if you like). Warm tortillas in microwave 20-30 seconds or until warm and flexible. Place 1/2 cup egg mixture into tortilla; roll burrito-style.Freeze burritos in single layer on a cookie sheet. When fully frozen (in about 1 hour) place burritos in large zip-top freezer bag; freeze.TO SERVE: Wrap in a paper towel.Cook in microwave until heated through (about 1 1/2 to 2 minutes).

I also tried out a new recipe last night.  This one has been on my list for a while.  Not sure what took me so long. A little nervous about the pesto maybe and the Fam's reaction.   Everyone seemed to love it though! It was quick and easy and will definitely make it again. It is from The Pampered Chef  cookbook, Dinner in Your Deep Covered Baker; it is also online HERE.
