RECIPE NIGHT

Last night was our team recipe night. I needed this to remind me of my love for cooking and Pampered Chef.  I've been feeling really blah over the whole thing lately.

It was fun though. Looking forward to getting back to more in person things.  We made Mandarin Pasta Salad and Greek Zucchini Fritters.  Both were super yummy!
For the salad, I cook chicken tenderloins on the grill pan and then sliced them.  I kept the chicken on the side and made Mikayla Vegetarian "Chik'n" Tenders in the air fryer.  She also said tofu would be really good in it.

I thought the nutmeg was a little strong in the zucchini fritters- I would probably half it next time.

For dessert Double Berry Galette- I modified the recipe and used the small bar pan in the AIR FRYER- so I didn't have to heat up the kitchen with the oven. It was delicious!

I'm still catching up on PC National Conference from this past weekend. I'm super excited about some of the things coming this fall.  And I can not wait to get my conference box with some of the new products!

I'm looking forward to hosting a fall product reveal and recipe tasting in person next month! My last in person party was my spring reveal right before COVID hit.  Stand by for more details on that. I can not wait to get the new Season's Best and try all the recipes! 😍

Cranberry Lake

We spent last week on vacation and it was glorious. Just looking at the above picture fills my heart with peace and happiness.

A sea plane landed and parked next door over night

Floating and swimming

Dock sitting-
card games-

More Kayaking-

Hiked Cathedral Rock and climbed the Fire Tower

Went for my first ride on the boat- he fished, I read-

There was a little free library on our road-

All in all it was a great week. Lots of laughter and time with family. Heart to heart talks and adventures.

June Books

1-  Greenlights by Matthew McConaughey (audio)    6/3

I listened to the audiobook read by Matthew himself. I very much enjoyed it. Some parts were abit cringy, some parts were hilarius. He definitely has led an interesting life.  He's a little obnoxious and full of himself yet somehow still loveable and endearing.  One thing that really stuck with me was to "Live your Legacy NOW."

Sometimes which choice you make is not as important as making a choice and committing to it.

Make my life my favorite movie. Live my favorite character. Write my own script. Direct my own story. Be my biography. Make my own documentary on me. Non-fiction, live, not recorded. Time to catch that hero I've been chasing. See if the sun will melt the wax that holds my wings or if the heat is just a mirage. Live my legacy now. Quit acting like me. Be me.

He talked to me about the mystery of marriage, and how when two people who are meant to be together unite, the adventure of livin side by side does not steal the individual’s sense of self, rather it enlightens and informs it

Death, family crisis, and newborns—the end of a life, trying to keep a life, and welcoming in a new one—these are three things that will shake your floor, give you clarity, remind you of your mortality, and hence, give you courage to live harder, stronger, and truer. Three things that make you ask yourself, “What matters?” Three things that make you realize, “It all does.”

2- Keeping Lucy by T. Greenwood   (kindle)    6/7

In 1969 Ginny gives birth to her second child, a daughter born with down syndrome.  Her baby, Lucy is more is else taken from her and placed in a "school" for "feeble minded".  Her husband and In-laws lead everyone else to believe the baby is stillborn.  Two years later after reading an expose on the school, Ginny and her best friend Marsha go to the school to see for themselves.

I found the story riveting and my heart ached for Ginny and baby Lucy.

3- The Librarian of Boone's Hollow by Kim Vogel Sawyer    (print)    6/7

This book was a delightful read. Faith based fiction that takes place in the Appalachian Mountains during the Great Depression.  Addie becomes a pack horse librarian in a tiny mountain town.  God's love and grace is wove beautifully through this story.

4-  Hooked on You by Kathleen Fuller (kindle) 6/14

A fun, clean romance set in a small southern town. Riley come "home" to Maple Falls to help her grandmother after she breaks her leg playing soft ball of all things! Riley was a little annoying and melodramatic but overall I liked the story.

5- The Happy Ever After Playlist (The Friend Zone #2) by Abby Jimenez (print)     6/19

I enjoyed this book more than the first book, maybe it's just that this one is fresher in my mind.  Maybe it's that there was a dog in mix. Maybe it's that I wasn't traumatized by this story. No one died. I really liked both main characters Jason and Sloan.

I heard that the author actually wrote this book first.

6- Luck of the Titanic by Stacey Lee (kindle) 6/21

I picked up this one after listening to the Modern Mrs Darcy Book Club author talk on The Downstairs Girl.  It is the fictional story of a pair of Chinese twins on the Titanic.  17 year old Valora Luck stows-away on the Titanic to reunite with her brother, Jamie, who works on the ship.  I really enjoyed this story.  It was also again eye opening to the differences in Class and Race.  I really did not realize the plight of the Chinese in our country's history.

For the first time, I resent how little the photograph shows me. It’s only a flash in time, with no glimpse into what lies deeper.

I thought you knew we’d always be together, even when we’re not.

7- People We Meet on Vacation by Emily Henry (print)    6/28

From the 2021 SRG and also the June Book Club selection for the MMD Book club.  I was looking forward to this book because I really enjoyed Beach Read by this author last summer.  Which I listened to on audio.  I found it a light, enjoyable read.

This month: 7

Total read in 2021:  47

Kindle/Ebook: 3    Print: 3     Audio: 1

Library: 6   Owned: 1

Favorite this month- nothing really stands out- maybe Luck of the Titanic. I feel like I have been kinda on a mediocre reading stretch lately. I feel like I need to slow down, savor and ponder more as I read.  But my to-read list is so long! SO many books! Not enough time.

July!

For Today {July 1, 2021}

Looking out my window

RAIN. And rainbows!

I am thinking

about July goals and vacation!

I am thankful

For a great date night with Rhett last night.  He is on vacation from job#2 so we had a wonderful and rare weeknight out.  If you are in the Syracuse area definitely check out Scenic Root in Manilus.

One of my favorite things

One of my June Goals complete- new book shelf!

I am reading

Hiding in the Light by Rifqa Bary, very interesting, story of a Muslim teen girl who converts to Christianity.

I am learning

Yesterday morning this email was in my inbox. I read it as I sat on the front steps post run, feeling discouraged, frustrated and grumpy.

Life feels hard and complicated. But I reminded again that Prayer is what anchors.  Prayer is important. Prayer is powerful. There is no prayer too big for God.

In my kitchen

Mediterranean Chicken Bowls- highly recommend. A good summer recipe too- its made in the Quick Cooker!  I also do a quick vegetarian option for Mikayla using chickpeas instead of chicken and saute everything in a skillet.

In my garden

I was so surprised to see these flowers bloom yesterday.  It was a hanging basket I bought back in April and killed. Some of them grew back! =)
