Margarita Shrimp and Chicken Skewers

Last night I tried out the new Skewer set for the Deluxe Air Fryer for the first time.  I LOVE this product!  I made shrimp and chicken because Hannah doesn't care for shrimp...

Just look at how beautiful they came out!  And oh, so delicious!

Want to know how I made them? My recipe inspiration was here- Margarita Grilled Shrimp
Here's what I did-
Marinade-
Let shrimp and chicken marinade for a few minutes- then thread onto skewers when ready to cook.  Basically I just let sit while I finished prepping everything.  The chicken would probably be even better if you let it sit a bit longer in the fridge.

I started the chicken first- I cooked it on the Rotisserie setting (400 degrees) for like 8 minutes.  Meanwhile I threaded the shrimp onto remaining skewers. Add the shrimp skewers to the rack and cooked on rotisserie setting for an additional 10 minutes.  Everything was cooked to perfection.

Served with a box mix of yellow rice and steamed broccoli.

Pro tip- use the toaster tongs to pinch the skewer ends so you can remove the hot skewers from the rack.

The new catalog is here! Let me know if you would like a copy- or of course check it out here online-> https://www.pamperedchef.com/party/mysteryhostfall

I am so excited that the Deluxe Air Fryer is back in our product line!  For everyone! Not just select Hosts.  I was the biggest holdout but man do I love it!

I mean it even makes day old fries taste like they are fresh outta the fryer!

Tell me something GOOD! =D

Sunflowers make me feel so happy! These are on our running route.

I just love this cute little cast iron skillets! Sunday I made little skillet cookies in the airfryer.

Mikayla's roommate made these gorgeous bowls!

Aren't they fantastic!

Lots of running with Puppy Buddy- it makes him so happy!

Planning next year's flower garden. Our front flower bed has this awful morning glory ground cover that seems to take over and eat everything in it path- next spring we are ripping it all out and re-doing our front bed.

TONIGHT! I'm going to be showing all my new fall goodies! My fall Mystery Host Party is open until September 1!  I'll also be posting some of the party fun here as I know I have some non-facebook peeps that follow here. ;-)  I miss "real" pampered chef parties, and am a little sad we are not able to do an in-person fall party this year... maybe soon!

Under 50!

Bruno's been running with me more. Today we ran some trails in the park.  The cooler air felt really nice.

Less than 50 miles to do in 13 days. I'm nervous I won't be able to before the end of the challenge. We'll see...

Can you believe August is half over already!? Crazy! Yesterday as I was grilling coneys for dinner and set the grill on fire (again)- I was thinking I am ready for grilling season to be over ;P I'm sad for summer to be ending but I am looking forward to fall I think.

The kids (hopefully) going back to school part time in person.  Hoodie weather and baking season. Spicy fall scents.

So anyway- I thought maybe it was time for another Daybook entry...

For Today {August 17, 2020}

I am thinking
This is from the devo I read this morning.  So good, reminding us that it is a Battle- all out war.  A reminder of where our focus should be. I encourage you to check it out- HERE.  Plus the picture with the woods and mountains just makes me feel happier.

I am thankful
For my Church Family. Eating Ice cream outside. Catching up with a friend I haven't had the chance to really talk to since March!  A husband who calls to make sure I'm OK when I'm late coming home.

One of my favorite things
Books and reading- my library piles have gotten out of hand again.  Both print and digital.

I am reading
A biography of Mister Rogers.

I am hoping
All goes well as the kids head back to school.

I am learning
In my kitchen
The chicken tenders, asparagus and tofu cooked in the air fryer- so yummy! All three were tossed with oil and Dijon Mustard Rub.  Cooked for about 10 minutes at 400 degrees on Airfry setting.

Also the rice was delicious Buttery Parmesan Rice- made in my large skillet. You're supposed to cook the chicken in the skillet, keep warm on a platter while you then cook the rice.  But obviously couldn't do it that way because of Mikayla- so I did the veg and protein in the airfryer instead- came out perfect!

I tried a new Spinach Artichoke dip on Friday night and thought it was pretty tasty.  It's super cheesy and was made in the Quick Cooker.  The recipe is in the new Season's Best Recipe Collection coming out Sept. 1

In my garden
We have gotten some awesome cucumbers so far- lots of tomatoes coming too.

Board room
We celebrated Mikayla's birthday this weekend with the Fam before she heads back to college on Saturday.  She requested a cookie cake.  I used this recipe-
This easy and Chewy Cookie Cake Recipe is the perfect way to celebrate birthdays or other special occasions! It tastes so much better than store-bought and only costs about $8 to make! Leave unfrosted or top with my favorite vanilla buttercream and sprinkles for a simple homemade cake!
Pinned: august eats

The results- she was so pleased by it. And it was delicious! I made it on my Large White Round Stone.  I doubled the recipe... and note to self next time do NOT double the icing too.

Post Script
It's that time of year again! New Products are coming Sept 1.  Our Pampered Chef team is doing products reveal on Aug 19 Here is the link to the Facebook Group

We're only saying that love's a force
That's powerful and strange
People make bad choices
If they're mad or scared or stressed
But throw a little love their way (throw a little love their way)
And you'll bring out their best
True love brings out the best!
A moment from my day
This picture cracks me up because Bruno has taken to snatching sticks he finds and trying to carry them on our walks.  It didn't turn out so well because it wasn't fully light yet and also he is never still. hahaha. But it still makes me laugh... probably harder than it should because it reminds me of the time when Hannah was a preschool and insisted on carrying a pine branch around the park and bringing it home! :P

Later on we found this rock at the park on our run...

Closing Notes:
I'm so tired and discouraged by the way people are treating one another. Angery, bitter, backbiting, down right hatred spewing from everywhere.  Just be kind people.  Take a step back and maybe try to see it from the other perspective. Try and show a bit of love and kind to your fellow human beings. Maybe *gasp* even the ones you are not too crazy about.

I hope everyone had a wonderful weekend and start of the week...  Mine was up and down but on the upswing now I'd say. Some days are just that way.

Rhett surprised me Friday night with this new water bottle. I LOVE it!

Some weekending Air Fryer success...

(sorta) Bloomin' Onion, my technique needs a little work.

Banana Bread (baked in the Quick Cooker Fluted Pan ;)

Roasted potatoes- so yummy!  I love the rotating basket.

Mini Frittata in the 5.5" mini cast iron skillet- so cute!

Our Pampered Chef Team is having our Fall Product Reveal Party on August 19 (on facebook).  I'm running mine as another Mystery Host Event.  At my Mystery Host in the spring Janet walked away with $240 in FREE pampered chef!  This time it could be you...

Also tonight I will be doing a LIVE video- sometime after dinnertime. Doing some make ahead breakfasts in Bruce. Be sure to swing by Amy's Pampered Kitchen to check it out.  Even if you miss the LIVE video- it will be pinned at the top of the page until we do our next one. ;-)

I am looking for TWO more virtual party host for AUGUST! As an added bonus- when you host a qualifying August party (has to close before Aug 31!) I will give you a new Fall Product- FREE, as gift from me! Party can start either Monday the 17 or Monday the 24th.  Party will then run through that Friday.   Check out the August Host special below...

Sunday my sister came over to hang out for a bit- that was fun.  We ate banana bread, sat in my kitchen, chatted and commiserated.

Then during youth group I walked around the prayer trail at our church. Chalking up another 3.5 miles for the OneNY500K

Just because. Dogs.

New running buddy??? Tony + baby bunnies

This morning Puppy Buddy joined me for the first time on a run.  He did great! And he LOVED it!

I did not want to get up this morning. Definitely did not want to run- it was gloomy and raining.  I didn't even want to walk the dogs.  Seemed like a real nice morning for lingering over coffee at the kitchen table.

But Bruno was persistent and oh so cute; convinced me to go for a walk. When we got back I let Chance into our bedroom- per usual to go back to bed, and to hide from Bruno. ;P

Bruno ran right to the door expectantly as I got ready to head back out. He had tons of energy and I figured- oh what the heck, let's give it a try. It was a little rough at first as he was super excited, jumping and pulling. But quickly settled down loping along beside or just ahead.

He did try to chase one other runner and a red pick up truck but other than that did pretty good. =D

I don't know if it will be an all the time thing- because I feel really guilty about Chance. But it felt great to run with a 4-legged buddy again.

Last night I finally did a LIVE video featuring Tony- our Air Fryer... (Mikayla named him).

The stromboli came out amazing! I was so pleased!  Tony hasn't let us down yet!

After dinner I was in the basement- imagine my surprise to see a baby bunny right outside the window.  Two baby bunnies actually.  Somehow they must have fallen into the window well.  It was too high for them to jump out.
Hannah to the rescue...

Then she and I made a cover for her chair.

A Little wonky and baggy but still an improvement!
